Method
- Wash and dry the tomatoes
- Slice off the top of the tomatoes with a sharp knife
- Remove the core and seeds with a small spoon. Finely chop the onion and add to a frying pan with the olive oil
- Cook the onion until it goes soft, then add the peas and parsley
- Cook for a further 2 minutes
- Once the mixture has cooled, put it into a blender or food processor
- Put the mix into the tomato skins with a spoon
- Cover the tomatoes with tin foil and place on the barbeque for around 15 minutes
