Method
- In a large frying pan fry the onion in a little sunflower oil until the onion starts to turn clear
- Beat the eggs and milk together and season with a little salt and pepper
- Pour in the eggs and using a spatula, mix the eggs around making sure they don't stick to the bottom of the pan
- Add in the diced red pepper
- Once you have mixed them in gently remove the pan from the heat and place under grill allowing the top to cook
- Once the top becomes solid and starts to brown under the grill remove it and cut into 4 portions
- Toast the pitta bread, then put one slice of the egg into each pitta and serve
