Pea salad with olives and red pepper

This salad has a great mix of colours and its strong flavours work really well for a picnic as a side dish.


Ingredients

  • 50g / 2 oz. of black olives - fresh rather than from a jar
  • 1 red pepper
  • 350g / 12 oz. fresh or frozen peas
  • 1 clove of garlic, chopped
  • 1 tablespoon of olive oil - extra virgin works best
  • 1 tablespoon of fresh mint, chopped
  • 1 tablespoon of fresh parsley, chopped
  • Lemon juice, to taste

Method

  1. Slice all the olives in half
  2. Remove all of the seeds from the pepper and slice it finely
  3. Put all the ingredients except the herbs into a saucepan
  4. Cook gently for around 15 minutes on a low heat
  5. Remove from the heat and leave to cool
  6. Add the mint, parsley and pepper according to taste
  7. Mix some of the olive oil with the lemon juice, whisking with a fork
  8. Add to the salad and serve
