Method
- Slice all the olives in half
- Remove all of the seeds from the pepper and slice it finely
- Put all the ingredients except the herbs into a saucepan
- Cook gently for around 15 minutes on a low heat
- Remove from the heat and leave to cool
- Add the mint, parsley and pepper according to taste
- Mix some of the olive oil with the lemon juice, whisking with a fork
- Add to the salad and serve
