Method
- Peel the potatoes and cut them into even-sized pieces, boil for 10 to 15 minutes
- Chop the vegetables
- Heat the oil in a different saucepan and add garlic, onion and peppers. Cook for 5 minutes or until softened
- Add the tomatoes, herbs and seasoning
- Cook for a further 10 minutes
- Place the drained potatoes in a warm dish and pour over the sauce
