Grilled pork chops - student style

Marinating the chops overnight will produce a savoury, succulent meal with very little effort.


Ingredients

  • 4 pork chops
  • 140ml / 5fl oz. of Worcestershire sauce
  • 1 teaspoon of honey
  • ½ teaspoon of tarragon
  • ½ teaspoon of rosemary
  • ½ teaspoon of basil
  • 1 clove garlic, finely chopped
  • Salt and Pepper, to taste

Method

  1. Place the chops in a shallow container
  2. Mix Worcestershire sauce, honey and garlic and pour into container. Mix up a little more sauce if there is not enough to cover the chops
  3. Cover with cling film and refrigerate overnight, turning at least once after 2 hours. Make sure that none of the meat juice drips onto other foods in the fridge
  4. When ready to cook, preheat the grill to 200°C / 400°F / Gas Mark 6
  5. Combine the spices in a small bowl, and rub one side of each chop with the mixture. Season with salt and pepper to taste
  6. Place an oven-proof frying pan on the hob over high heat and add oil
  7. When oil is smoking, place the chops in the pan, spice-side down and fry for 30 seconds. Turn chops over and place the pan under a grill for 8 to 10 minutes
  8. Transfer to a heated plate and serve immediately
