Method
- Place the chops in a shallow container
- Mix Worcestershire sauce, honey and garlic and pour into container. Mix up a little more sauce if there is not enough to cover the chops
- Cover with cling film and refrigerate overnight, turning at least once after 2 hours. Make sure that none of the meat juice drips onto other foods in the fridge
- When ready to cook, preheat the grill to 200°C / 400°F / Gas Mark 6
- Combine the spices in a small bowl, and rub one side of each chop with the mixture. Season with salt and pepper to taste
- Place an oven-proof frying pan on the hob over high heat and add oil
- When oil is smoking, place the chops in the pan, spice-side down and fry for 30 seconds. Turn chops over and place the pan under a grill for 8 to 10 minutes
- Transfer to a heated plate and serve immediately
