Method
- Preheat the oven to 200°C.
- Add the baby potatoes, vegetables, garlic and dried basil to a large oven tray. Pour over one tablespoon of oil and toss together.
- Bake for about 25 to 30 minutes.
- Take out of the oven and turn the potatoes. Then place the cod between the vegetable. Drizzle each fillet with the remaining oil.
- Bake in the oven for 10-15 minutes until the potatoes are browned and crisp, and the fish is cooked through.
