Lamb rogan josh

Sometimes all you can think about having is a curry. Try this recipe for Lamb Rogan Josh, which you can use with fresh or leftover lamb, and goes great with boiled rice or a poppadum. Your choice!


Ingredients

  • 2 medium onions, diced
  • 450g / 16 oz. loin of lamb, trimmed and diced
  • 300g / 10½ oz. of plum tomatoes, tinned
  • 2 garlic cloves, sliced
  • 1 chilli pepper, sliced and seeds removed
  • 5 mushrooms, chopped
  • 3 teaspoons of curry powder or Garam Masala if available
  • 2 teaspoons of turmeric
  • 1 teaspoon of ground coriander
  • 1 teaspoon of cumin
  • 1 tablespoon of olive oil

Method

  1. Heat olive oil in a wok or heavy-based frying pan
  2. Add the lamb pieces and cook till browned, if your using leftovers then you add in the meat but you don't have to cook until browned
  3. Add onions and fry for 5 minutes until softened
  4. Add chopped garlic and chilli and stir for 1 minute, then add the rest of the spices
  5. Fry for 5 minutes then add tinned tomatoes and reduce heat and simmer for at least 10 minutes
  6. Add mushrooms and simmer for about half an hour; then serve

  • Wooden spoon

Serving suggestions

Serve with boiled brown rice or poppadums’
