Method
- Heat olive oil in a wok or heavy-based frying pan
- Add the lamb pieces and cook till browned, if your using leftovers then you add in the meat but you don't have to cook until browned
- Add onions and fry for 5 minutes until softened
- Add chopped garlic and chilli and stir for 1 minute, then add the rest of the spices
- Fry for 5 minutes then add tinned tomatoes and reduce heat and simmer for at least 10 minutes
- Add mushrooms and simmer for about half an hour; then serve
