Method
- Fry the minced pork and onion, then add in the apricots for a few minutes on a low heat then season. The sausage meat contains fat, so there is no need to add extra oil to the pan
- When the meat is cooked, place all the ingredients in a large mixing bowl and mix thoroughly together
- Brush a large loaf tin with oil and fill with the mixture
- Smooth the top with a palette knife and place in the fridge for 1 hour
- Pre-heat the oven to 180°C / 350°F / Gas Mark 4
- Cook in the pre-heated oven for around 1¼ to 1½ hours
