Beef chilli con carne

This simple recipe makes mincemeat a bit more exciting and is ideal for a quick dinner. It is also perfect for freezing in individual portions.

Ingredients

  • 1 medium onion, finely diced
  • 1 clove of garlic, peeled and crushed or finely chopped
  • 1 medium-sized carrot, finely diced
  • 1 medium-sized pepper, diced
  • 5 button mushrooms, sliced
  • 450g / 1lb lean (5% fat) minced beef
  • 2 teaspoons plain flour
  • 1 teaspoon of chilli powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon smoked paprika
  • 1 low-salt beef stock cube dissolved in 150ml of boiling water 
  • 1 tablepoon of tomato pureĆ©
  • 1 x 400g tin chopped tomatoes
  • 100g frozen peas, defrosted
  • 1 x 400g tin kidney beans
  • 60g basmati rice per person

Method

  1. Peel and dice the onion and carrot. Dice the pepper.
  2.  Peel and crush or finely dice the garlic and slice the mushrooms.
  3. Put minced beef in dry frying pan. There is sufficient fat in mince for frying.
  4. Cook for 15 minutes over a low heat until well browned, stirring all the time.
  5. Add the onions, pepper and garlic to the pan and cook for 2 to 3 minutes. Sprinkle on the flour and chilli powder, cumin, coriander and smoked paprika and cook for 1 to 2 minutes, stirring all the time.
  6. Add beef stock, tomato pureƩ and tinned tomatoes. Bring to the boil.
  7. Add the kidney beans and defrosted peas to the mince.
  8. Simmer for 20-25 minutes or until the sauce is at the desired consistency.
  9. Cook the rice as per the pack instructions.
  10. Serve the rice, topped with the sauce.
