Here's the secret to perfect pancakes in just a few easy steps. Sweeten up this simple staple by adding fresh or stewed fruit. 


Ingredients

  • 100g or 4 oz of plain flour
  • 2 medium eggs
  • 300ml or 10 fl oz of semi-skimmed milk
  • 1 teaspoon of sunflower oil

Method

  1. To make the batter, beat the eggs.
  2. Sift the flour into a large mixing bowl.
  3. Make a well or even hole in the centre of the flour and then add the beaten eggs.
  4. Whisk the eggs and flour. Then slowly whisk in the milk until the batter is smooth with no lumps. 
  5. Brush a non-stick medium frying pan with the oil and heat untill it's very hot. 
  6. Pour in about 3 tablespoons of the batter and tilt the pan from side to side to form a thick layer. Cook for about one minute or until the underside is slightly golden. 
  7. Flip the pancake over with a spatula and cook until the underside is slightly golden.
  8. Continue with the rest of the batter. Add more oil when required.

  • Low-fat natural yogurt with sliced strawberries: 1 tablespoon of sliced strawberries and 1 tablespoon of low-fat natural yogurt adds 25 calories
