Method
- Soak 12 skewers to stop them from burning on the barbecue
- Place all the vegetables into a large bowl, along with the chilli, lemon, rosemary and olive oil
- Mix everything in the bowl
- Leave to marinate in the fridge
- Thread the ingredients onto the skewers and place on a tray
- Place the skewers on the barbecue and cook for around 8 minutes, until cooked through, turning every 2 minutes to ensure all sides are golden
