Baked oat bars

These baked oats bars are perfect as a snack or eaten for breakfast. The blueberries can be swapped for fruit of your choice.


Ingredients

  • 200g/7oz. porridge oats
  • Zest of 1 lemon
  • 150ml low-fat milk
  • 4 eggs, beaten
  • 1 tablespoon golden syrup
  • 100g/3.5oz. blueberries

Method

  1. Preheat the oven to 200°C/400°F/Gas Mark 6.
  2. Line a square baking tin with baking paper.
  3. Place the oats and lemon zest in a mixing bowl. Stir to combine.
  4. In a separate bowl, mix the milk, eggs, and golden syrup.
  5. Add the wet mixture to the oats and stir until just combined.
  6. Add the blueberries and stir gently, taking care not to burst the blueberries.
  7. Transfer to the lined baking tin and bake for 25-30 minutes until golden brown on top.
  8. Once cool enough to handle, cut into 12 squares.
  9. Can be enjoyed warm or cold.
