Spaghetti Bolognese

This Italian favourite is a great family meal. Try it with pork, lamb or turkey mince to change it up.

Ingredients

  • 450g lean (5% fat) mince beef
  • 1 onion finely diced
  • 6 mushrooms, diced
  • 1 carrot, peeled and finely diced
  • 1 low-salt beef or vegetable stock cube dissolved in 275ml boiling water
  • 400g tin of chopped tomatoes
  • 10ml / 2 teaspoons tomato pureĆ©
  • Pinch of salt and pepper
  • 225g spaghetti

Method

  1. Cook the mince beef, onions and mushrooms and carrots in a dry pan (low heat) for 15 minutes. Drain any excess fat from the pan.
  2. Add the stock, tin of chopped tomatoes, tomato pureĆ©, pinch of salt and pepper. 
  3. Cook gently for 45 minutes.
  4. Cook the spaghetti for 10 to 15 minutes in a saucepan of boiling salted water as per the pack instructions. Drain off the water and serve topped with the Bolognese sauce.

Serving suggestions

Serve with a tossed green salad or your favourite vegetables. Easily increase your fibre intake and stay fuller for longer by using wholegrain spaghetti. 


This can be frozen in portions for those evening when you are in a rush. Any leftover Bolognese sauce can be used to fill wraps or as a topping for baked potato.
