Pasta with olive oil, garlic and chilli

This dinner dish is both classic and simple, which makes it a great choice when inviting a few friends over for a meal. Better yet, it takes only minutes to prepare and is easy on your budget.


Ingredients

  • 225g / 8 oz. of dried pasta
  • 2 teaspoons of olive oil
  • 2 large garlic cloves, peeled and finely chopped
  • 1 large red chilli, de-seeded and finely chopped
  • Sprig of fresh parsley
  • Salt and fresh ground black pepper, to taste

Method

  1. Bring a large pot of water to a boil making sure the handle of the pot isn’t over the edge of the cooker or other rings
  2. Slowly add the pasta to the water. Stir occasionally to prevent them from sticking together
  3. Follow the instructions on the pasta packet for cooking time, then strain and pour into a serving bowl. Stir in a teaspoon of olive oil to prevent pasta from sticking
  4. Heat the other teaspoon of olive oil in a small frying pan and add the garlic, chilli and season with black pepper
  5. Cook at moderately high heat for about two minutes to infuse the flavours into the oil. If oil spills onto the hob, be sure to wipe it up as soon as the surface is cool
  6. Mix into the pasta, garnish with fresh parsley and serve immediately
