Method
To prepare the prawns
- Defrost the cooked prawns by placing them in a colander in a bowl in the fridge
- When defrosted place on some kitchen paper to remove excess water
- Put the prawns in a bowl and dress with half a tablespoon of extra virgin olive oil and half a tablespoon of lemon juice
To make the Marie Rose sauce
- In a clean bowl, add all the ingredients and whisk
- Season with cayenne pepper and a pinch salt (optional)
To make the salad garnish
- Peel, de-seed and dice the cucumber
- Quarter the cherry tomatoes
- Finely dice the spring onion
- Finely chop 1 baby gem, and cut the other one in quarters
- Place the lettuce in a clean mixing bowl. Add the chopped cucumber, cherry tomatoes and spring onions
- Garnish with chopped mint and a squeeze of lemon
