Beef stew

Stews are simple and versatile dinner option which can be cooked in a slow cooker or an oven. Beef is packed full of iron; an essential mineral needed for red blood cells and prevention of anaemia. This easy beef stew recipe can be prepared before dinnertime and the leftovers can be frozen for another day. 


Ingredients

  • 675g / 1½lb of lean stewing beef, diced
  • 1 dessertspoon vegetable oil
  • 1 beef stock cube dissolved in 575ml / 1 pint of water or homemade stock
  • 40g / 1½ oz. of plain flour
  • 5 medium carrots, peeled and chopped
  • 1 medium onion, chopped
  • Salt and pepper, to taste

Method

  1. Add the oil and meat to a frying pan and fry on both sides until browned.
  2. Fry the meat in a frying pan on both sides until browned. Before you start, refresh your skills on cooking meat safely here.
  3. Remove from the frying pan and place in a saucepan.
  4. Chop the onions and carrots and fry lightly in the frying pan. Keep in mind our tips on cooking vegetables safely.
  5. Remove from the frying pan and place with the meat in the saucepan.
  6. Sprinkle the flour into the frying pan and stir well.
  7. Add the stock and seasoning. Continue stirring.
  8. Add this to the meat and vegetables and cook gently over a low heat for 1 to 1½ hours until the meat is tender.
