Poached eggs

Poaching is a great alternative to frying; it is quick and easy with the same great taste and none of the added fat.


Ingredients

  • 250ml / ½ pint of water
  • 1 dessertspoon of vinegar
  • 2 medium eggs
  • 2 slices wholemeal bread 
  • 10g / ½ oz. low fat spread 
  • Black pepper to taste

Method

  1. Put the water into a saucepan or frying pan, add vinegar and bring to the boil
  2. Break the eggs into the boiling water
  3. Simmer gently until the eggs are set, this takes about 2 to 3 minutes
  4. While the eggs are cooking toast the bread. Once toasted spread with the low-fat spread and serve with the eggs
  5. Season to taste

  • Frying pan
  • Measuring jug(for liquids)
  • Saucepan

Serving suggestions

To boost your fibre intake, serve with some tomatoes, mushrooms or spinach
