Method
- Put the water into a saucepan or frying pan, add vinegar and bring to the boil
- Break the eggs into the boiling water
- Simmer gently until the eggs are set, this takes about 2 to 3 minutes
- While the eggs are cooking toast the bread. Once toasted spread with the low-fat spread and serve with the eggs
- Season to taste
