Egg fried rice

Egg fried rice is not only tasty, it is a great way to use up leftover rice. So you get an affordable, one-pan meal that helps reduce food waste. What’s not to love.


Ingredients

  • 1 egg 
  • 1 garlic clove
  • ½ medium onion
  • 1 medium carrot 
  • 1 teaspoon olive oil  
  • 50g / 2 oz frozen peas 
  • ½ tablespoon low salt soy sauce  
  • ¼ teaspoon five spice 
  • 1 teaspoon sesame oil 
  • 100g / 3½ oz of cooked wholegrain rice 
  • Salt and pepper to taste

Method

  1. Crack the egg into a small bowl and whisk with a fork.
  2. Peel and finely dice the garlic, onion, and carrot.
  3. Heat the olive oil in the pan over a medium heat and fry the garlic, onion, and carrot until soft. Then add the frozen peas.
  4. Add the five spice, soy sauce, sesame oil, and cooked rice to the pan and mix everything together.
  5. Add the egg to the pan and give everything a good mix, cook for a few minutes until the egg is cooked through and serve.
