Method
- Preheat the oven to 180°C / 350°F / Gas Mark 4.
- Heat the oil in the saucepan.
- Finely dice the onion and fry for 2 to 3 minutes.
- Add the chicken cubes. Cook for 10 minutes and make sure your meat is cooked through.
- Cook broccoli florets in boiling water for 3 to 4 minutes, drain and set aside.
- Mix the milk, soup and curry powder together in a jug.
- Place the cooked chicken pieces, onion and broccoli into the casserole dish.
- Pour in the soup mixture, season with salt and pepper to taste, and cover with the breadcrumbs and grated cheese.
- If using sliced bread to make the breadcrumbs, make using either a hand-held blender of food processor.
- Cook in the pre-heated oven for 20 minutes.
