About this recipe

This recipe was adapted from the safefood 101 Square Meals cookbook. Read on to learn how to make a classic lasagne in just a few simple steps. 


Ingredients

  • 450g / 1lb of lean minced beef
  • 1 medium onion
  • 1 medium green or red pepper
  • 8 button mushrooms
  • 1 x 400g / 14 oz. tin of chopped tomatoes
  • 2 dessertspoons of tomato sauce
  • 1 clove of garlic
  • 10 sheets of easi-cook lasagne sheets
  • Salt and pepper, to taste
  • Cheese sauce (see below)

Cheese Sauce

  • 25g / 1 oz. of low-fat spread
  • 25g / 1 oz. of plain flour
  • 425ml / ¾ pint of semi-skimmed milk
  • 50g / 2 oz. low-fat cheddar cheese, grated
  • Pinch of salt and pepper, to taste

Method

  1. Pre-heat the oven to 180°C / 350°F / Gas Mark 4.
  2. Chop the onions, pepper, mushrooms and garlic.
  3. Take a look at our top tips on cooking with mince, then put the mince into a large pan and fry until completely brown, stirring all the time with a wooden spoon.
  4. Drain off any excess fat before adding onions and garlic to mince and cook for 3 to 4 minutes.
  5. Add the chopped peppers, mushrooms, tin of tomatoes and tomato sauce to the mince mixture.
  6. Bring to the boil and leave to simmer on a low heat for 15 to 20 minutes.

To make cheese sauce:

  • Melt the low-fat spread in a saucepan.
  • Add flour and cook over a low heat for 1 minute, stirring all the time.
  • Remove from the heat and cool slightly.
  • Add the milk, salt and pepper, whisking all the time.
  • Return to the heat and bring to the boil. Keep whisking.
  • Reduce heat and cook slowly for 5 minutes, then add the grated cheese 2 minutes before the end of the cooking time.

Final Preparation:

  • Put a layer of meat sauce in the bottom of a casserole/lasagne dish, cover with easi-cook lasagne sheets.
  • Make 1 or 2 more layers as above finishing with a layer of lasagne sheets. Cover the top layer with the cheese sauce.
  • Sprinkle the top with grated cheese and bake for 30 to 40 minutes.

Serving suggestions

A fresh salad goes well with oven-baked lasagne, serve both to add some veg the dinner table.
