A great way to use up leftover brussels sprouts - or other vegetables such as broccoli

Ingredients
One small onion finely chopped
1 tablespoon olive oil
350g / 12 oz. leftover Brussels sprouts
150g / 5 ½ oz. leftover ham or bacon cut into small pieces
Method
Finely peel and chop the garlic and onion
Heat the oil in a frying pan and cook the onion and garlic until soft
Cut spouts in half and toss in the pan with the chopped ham
Cook until heated through
Season to taste
